Honeycomb

Oooo...Honeycomb...

Sweet....We went to Theobroma Chocolate Lounge for some chocolatey time and this question came up:
What is honeycomb made of? Of course, the honeycomb here is not the honeycomb up there^^^ but honeycomb toffee as the British would say.

Honeycomb is just hardened sugar with syrup. They are made by adding baking soda into the mixture so it will decompose under heat to form carbon dioxide that gives honeycomb its texture. Sometimes vinegar is added to encourage the release of carbon dioxide - Acetic acid (CH3COOH)+ Sodium bicarbonate (NaHCO3) ->  CH3COONa + H2O + CO2(g) muahaha...forgot my chemistry.

Well, for those who are skillful in the arts of cooking - can try this recipe
